Quick Leek Pie
A quick pie with leek and cheese is easy to make from dough on ordinary homemade yogurt or kefir. Immediately turn on the oven to heat, so that when all the ingredients are ready, put the cake pan in the preheated oven. This is an important point, since if baking soda is added to the dough, it should not be kept for a long time at room temperature - air bubbles formed from the contact of soda with acidic kefir will disappear, baking will not be lush.
Unlike onions, leeks are sweeter, so you get a pie - you lick your fingers!
In addition to onions and cheese, you can add a few finely chopped olives (in the French style) to the filling.

Ingredients for making a quick leek pie:
- 1 stalk of leek;
- 230 g yogurt;
- 3 chicken eggs;
- 180 g of wheat flour;
- 30 ml of olive oil;
- 45 g of hard cheese;
- 5 g baking powder;
- 3 g of baking soda;
- 40 g butter;
- salt, granulated sugar, rosemary, thyme.
A method of making a quick leek pie
We rinse the thick stem of leek with cold water, cut off the root lobe. There may be sand in the recesses of the leek leaves, so carefully inspect the stem, rinse the leaves well if necessary.
We chop the washed onion with ringlets 2-3 mm thick. The topmost green leaves are best left to the broth, they are tough.
Lubricate the pan with vegetable oil, put the butter in a heated pan, melt. Throw the leek into the melted butter, sprinkle with salt to taste, cook for several minutes until it becomes soft.
Pour homemade yogurt in a bowl, add a teaspoon of table salt and a pinch of granulated sugar.
Next, mix the yogurt with fresh chicken eggs, beat the ingredients with a whisk for literally a minute, you just need to destroy the structure of the eggs.
Mix the flour for the cake with soda and baking powder, sift through a sieve, add to the liquid ingredients.
Pour olive or any vegetable oil into a bowl, knead the dough so that it is free of lumps.
Rosemary leaves chopped finely. From branches of thyme we clean leaves. Add aromatic herbs to the bowl. For so many ingredients, one teaspoon of chopped greens is enough, the aroma of herbs will be noticeable.
Now we put in a bowl the fried and slightly cooled leek along with the butter in which it was fried. We cut hard cheese into cubes, send it to the bowl after the onion.
Lubricate the fireproof form with a non-stick coating with a thin layer of butter, sprinkle with semolina or wheat flour. We spread the dough into the mold and send it to the oven heated to 185 degrees.
Cook for about 30 minutes until golden brown, immediately remove from the mold, cool on a wire rack.
Serve warm to the table. This pie is better to eat right away, fresh it is incredibly tasty.
If the piece still remains, then the next day, be sure to heat it in the microwave or fry in a pan.
