Simple carrot cake with walnuts
Delicious carrot cake with nuts will decorate any holiday. This is the simplest carrot cake, but despite its simplicity, it is always popular with guests. By the way, you can experiment a bit. For example, to split the dough in half, bake two cakes in round detachable forms, and to layer with butter cream, it will also turn out delicious!

Ingredients for Carrot Cake with Walnuts
For the test:
- 150 g peeled walnuts;
- 250 g raw carrots;
- 200 g of granulated sugar;
- 3 chicken eggs;
- 100 g butter;
- 230 g of wheat flour;
- 1.5 tablespoons ground cinnamon;
- 2 teaspoons of baking powder
- salt, butter to lubricate the mold.
For cream and decoration:
- 400 g sour cream;
- 50 g of dry dessert mix (instant cream);
- 10-12 halves of walnuts;
- fresh mint leaves.
A method of preparing a simple carrot cake with walnuts
We make the dough in a food processor, it is fast and convenient. We start with nuts. We sort it out so that shell fragments do not fall into the dough, then grind it so that rather large crumbs are preserved.
Grind fresh sweet carrots coarsely, as on a vegetable grater with large holes.
We add fine white granulated sugar to carrots and nuts, it can be replaced with cane sugar, which will slightly change the taste of carrot cake - a slight caramel flavor will appear.
We break large chicken eggs into the bowl, pour a pinch of fine salt to balance the sweetness.
Pour the premium wheat flour, ground cinnamon and baking powder. Cinnamon goes well with carrots and nuts.
Melt the butter in a saucepan, cool. You can’t add very hot oil to the bowl, cool it to at least 35 degrees Celsius. Next, when the ingredients of the dough for carrot cake are collected together, mix everything thoroughly.
Take a cupcake shape with a hole in the middle. The size of the form is 25 centimeters. Lubricate the form with soft butter and sprinkle with flour, pour the dough. We heat the oven to 180 degrees Celsius.
Bake the cake for about 45 minutes. If the shape is of a different size, then the baking time may vary slightly, I advise you to pierce the cake with a wooden skewer to find out if it is baked.
We take the cake from the mold, put it on the wire rack, completely cool and transfer to the dish. If you put hot cakes on a dish, it will damp from the bottom during cooling.
Making cream for carrot cake. In a tall glass, beat sour cream and dry instant cream. The cream comes with different additives, this cake is suitable with the scent of vanilla. When the cake has cooled completely, cover it with plenty of lush cream.
Whole halves of walnuts are dried in the oven for 10 minutes, cool. We decorate the carrot cake with the cooled nuts, put in the refrigerator for a couple of hours, and before serving, decorate with fresh mint leaves.
