Juicy whole baked chicken
A whole-baked chicken with a golden, crispy crust soaked in fragrant oil with rosemary and thyme is a great idea for a Sunday dinner or a festive feast. In this recipe, I baked a chicken on a salt pillow, this is a great way to cook a bird deliciously, quickly, without hassle and with a guarantee that everything will work out. Salt use the most common, coarse, no additives. A kilogram of salt is enough for a fairly thick layer on a baking sheet measuring 30x40 centimeters.

Ingredients for whole baked chicken
- 1 chicken weighing 1.5-2 kg;
- 30 g butter;
- 4 cloves of garlic;
- rosemary, thyme, paprika;
- 1 tablespoon of honey;
- 1 tablespoon of soy sauce;
- ½ lemon;
- 1 kg of salt.
The method of cooking the chicken baked in the oven
First prepare the butter paste. Cut the butter into cubes, put in a bowl. Place the bowl in a bowl of hot water for 5 minutes to make the butter soft. To the softened oil, add the cloves of garlic, passed through the press, pour a teaspoon of ground sweet paprika, 1.5-2 teaspoons of coarse salt, add rosemary and thyme. Herbs in a whole baked chicken recipe can be used either fresh or dried.
Mix the paste thoroughly. By the way, salt at this stage is necessary. The fact that the chicken carcass lies on a salt pillow does not affect the salinity of the meat, only it sticks to the skin below. If you do not rub the carcass with salt, then the chicken will turn out unsalted.
We take the prepared chicken carcass, first we rub it with paste from the inside, then we lift the skin on the breast and rub the paste into the meat. You need to crawl your hand into the farthest corners - under the skin of the hips, legs, completely rub the breast. If the peel is a little torn - it does not matter, there are always toothpicks or threads.
We turn the wings under the carcass. We cross the legs and tie with linen or culinary thread. We break off the gap on the skin with toothpicks. Inside the carcass we put lemon cut into small cubes.
Put foil on a baking sheet, pour salt on the foil. Tuck the edges of the foil to make a trough. On salt we put sprigs of rosemary without leaves. I always keep these branches, even from dried ones there is a huge benefit!
We heat the oven to 170 degrees Celsius. Put the carcass on a baking sheet and send it to the hot oven for about 1 hour. Baking time depends on the weight of the chicken, if 2 kg or more, then you need to cook 20 minutes longer.
Mix the honey and soy sauce in a bowl. 10 minutes before the readiness we take out the baking sheet from the oven, grease the chicken with a mixture of honey and soy sauce and again send it to the hot oven.
The bird turns out juicy, with a golden brown crust, it looks very appetizing!
Juicy chicken, baked whole in the oven, is ready. Carefully remove the chicken from the salt cushion, transfer to a board or plate. Salt with foil is no longer needed, in the recipe these are auxiliary disposable ingredients that have served their purpose.
