Squid in tomato sauce - simple and delicious
Squids in tomato sauce can be served as an independent dish or mix seafood with pasta - you get a tasty and satisfying second dish. This simple recipe will help novice cooks clean and cook squids without much hassle. Try it once - you will definitely like it! The recipe is suitable for lean and vegetarian menus in cases where it is permissible to include seafood and fish in the diet. It is better to use homemade tomato sauce without additives and preservatives, and if this is not the case, grind peeled tomatoes in a blender and boil the tomato puree for several minutes without oil and without salt, for a color and flavor in the puree you can add a couple teaspoons of sweet paprika.

- 20 g butter;
- 10 ml of olive oil;

The method of preparation of squid in tomato sauce
It takes a little time to defrost seafood to make squid in tomato sauce - 20 minutes before cooking we take the squid carcasses out of the freezer, put them in a pan or bowl filled with cold water.
Take a large pot, fill with boiling water, pour 2-3 teaspoons of table salt. In boiling water, one at a time, put the squid. As soon as the water boils again, cook each squid for 2 minutes. If you load all the seafood at the same time, the water will cool dramatically and boil again soon.
We put a bowl of cold water next to it, remove the carcasses with tongs from boiling water and put it in cold water - this will stop the cooking process, the squid will remain tender and juicy.
We thoroughly wash the cooled seafood under a stream of cold running water - wash off the remnants of the curled skin, remove the entrails and chord (a thin transparent strip located inside the carcass).
The carcasses of boiled squid are cut into rings about half a centimeter thick, and the tails are cut into thin strips.
In a pan, heat the butter and olive oil, in the melted butter we put finely chopped onions and chopped garlic, salt, pepper, pour a pinch of sugar.
When the onion becomes translucent, put the chopped seafood into the pan.
Then add the tomato puree. In this squid recipe in tomato sauce, homemade tomato puree without salt and sugar, you can also use peeled tomatoes in your own juice.
On high heat, fry the contents of the pan for 5-7 minutes, periodically shake the pan.
We chop dill with a sharp knife very finely or grind it in a mortar with a pinch of salt. Add chopped dill to the rest of the ingredients.
Stir, warm the dish for another 1-2 minutes, and remove the pan from the stove.
Serve squid in tomato sauce on the table hot or warm, with fresh white bread with crisp. You can also boil spaghetti, mix with calamari and sprinkle with grated parmesan - very tasty!
