The history of the origin of chocolate truffles leads us to a French patisserie. According to legend, the assistant cook did not succeed in chocolate ganache, and in order to hide his mistake, the cook prepared sweets. The chef liked the sweets, since then this popular dessert has been prepared all over the world with constant success.

- 320 g of dark chocolate;
- 80 g of 33% cream;
- 80 g of whiskey;
- 25 g butter;
- 50 g of cocoa powder.

There are recipes for which accuracy is not needed. Many products are taken "by eye", but not in this case! To make sweets you need precision!
So, weigh the right amount of chocolate. Dark chocolate or light - decide for yourself, you can mix both types in equal proportions.
Break the chocolate into small pieces, the smaller, the better. Small chocolate chips quickly melt in a hot environment.
Pour in the cream the fat cream. The fatter the cream, the more tender the candy will be, so I advise you to take cream, the fat content of which is not lower than 26%.
Add a piece of butter to the stewpan, again - high-quality (82% fat content).
Pour whiskey into the stewpan - a brand of the drink of your choice and wallet.
We heat the mixture to about 80 degrees Celsius, you do not need to bring to a boil!
Immediately pour the hot mixture into a bowl with crumbled chocolate in a thin stream.
Constantly stir the contents of the bowl so that all the pieces of chocolate melt.
Next, mix the mass with a silicone spatula for about 5 minutes. The chocolate mass is shiny and silky. At this stage, the mass is liquid, it is called ganache.
Pour the chocolate mass into a convenient container and put it in the refrigerator for 4-6 hours or at night.
When the ganache hardens well, we make truffles.
Pour cocoa powder onto a flat plate. Take two teaspoons. Forming sweets with spoons is somewhat similar to making knives.
First, take a ganache with one spoon, with a second spoon we help remove the ganache directly into a plate with cocoa.
At this stage, you can work with your hands. I advise you to hold your hands under a stream of cold water and wipe dry with a napkin.
We take sweets, roll in cocoa, roll balls between palms.
We spread the homemade dark chocolate truffles on a board or plate, sprinkle with cocoa powder, put in the refrigerator.
Truffles prepared according to this recipe can be stored in the refrigerator for 2-3 days.
