Zucchini fritters with parmesan and mushrooms - a delicious recipe with a photo of the available products. Ordinary zucchini pancakes can easily be turned into a boring dish by adding a few savory ingredients to the dough. In the squash season, indulge in seven vegetable pancakes with wild mushrooms, it is not only very tasty, but also satisfying. Zucchini is a versatile vegetable, it is suitable for stuffing, for cooking, for main dishes, and even for sweets there are delicious recipes - stews and preserves are made from zucchini. In the autumn, when the “silent hunt” begins, it is necessary to combine mushrooms and zucchini in one dish, and the recipe for my mushroom pancakes is just right for this.

Ingredients for zucchini fritters with parmesan and mushrooms
- 400 g of peeled zucchini;
- 40 g parmesan;
- 2 eggs;
- 2 tablespoons of flour with a slide;
- 120 g of fresh mushrooms;
- 1 onion;
- a bunch of parsley;
- 1 teaspoon of ground sweet paprika;
- 1 teaspoon ground fenugreek;
- salt, olive oil.
The method of preparation of satisfying fritters from zucchini with parmesan and mushrooms
Peel the zucchini, select a soft center with seeds with a spoon, leave only a dense pulp. Gentle zucchini can be used whole without peeling.
Grate the vegetable on a large vegetable grater or grind it in a food processor, put in a deep bowl.
Important! You need to salt the dough with zucchini at the very end, if you salt it at this stage, then a lot of moisture will be released, you will have to squeeze it out or add excess flour.
Rub the parmesan on a fine grater, this cheese is ideal for zucchini fritters, I do not recommend replacing it with anything else. Add grated parmesan to the bowl.
Break two fresh chicken eggs into a bowl, mix the ingredients with a spoon.
Pour wheat flour. I advise those who advocate a healthy lifestyle to use whole grains, and to those who cook dishes without wheat flour, replace it with chickpeas or rice.
Season the dough - pour ground sweet paprika and ground fenugreek. In shops of oriental spices you can buy a ground chaman, this seasoning is also prepared mainly from fenugreek.
Finely chop fresh mushrooms, in this recipe fritters from zucchini boletus, dice the onion. Heat olive oil in a pan. In the heated oil, first put the chopped boletus, when the moisture evaporates, add the chopped onion. Fry mushrooms with onions until cooked.
Cool the fried mushrooms a little, add to the dough. At this stage, salt the dough, mix thoroughly.
Add a small bunch of finely chopped parsley, mix again.
Grease a frying pan with a non-stick coating with olive oil, spread a tablespoon of pancakes on a heated pan, fry until golden brown on each side for about 3-4 minutes.
Serve fritters from zucchini on the table hot with sour cream or yogurt sauce. Enjoy your meal!
It is best to cook such pancakes in the fall, however in the winter, on the shelves of shops you can find zucchini with mushrooms, and fry home-made pancakes.
