Lean cabbage cabbage with pumpkin
Lean cabbage soup with pumpkin is a hot first course for thrifty housewives, in whose bins there are a lot of vegetables stocked up for the winter. So, if there is pumpkin, cabbage and zucchini, then I advise you to cook a light vegetarian soup for lunch - healthy, tasty, which, moreover, will not spoil the figure.
During fasting, animal products are completely excluded from the menu. However, lean cabbage soup will be even tastier than those cooked in meat broth. The larger and more varied the assortment of vegetables that you put in the pan, the more useful the finished dish will turn out: fasting needs to maintain strength.

Ingredients for Lean Cabbage Soup with Pumpkin
- 300 g of white cabbage;
- 300 g pumpkin;
- 200 g of potatoes;
- 200 g zucchini;
- 60 g of onions;
- 150 g carrots;
- 150 g celery;
- 1 pod of red chili peppers;
- 20 ml of olive oil;
- 2 cubes of vegetable stock;
- spices to taste, salt, green onions for serving.
The method of cooking lean cabbage soup with pumpkin
Any soup, except soups for a special diet, you need to start cooking with the preparation of its base - sautéed vegetables, which give the finished dish an appetizing smell and taste. Usually it is onions, celery and carrots. It is always better to start with onions.
So, in a soup saucepan we heat olive oil for frying (odorless), throw finely chopped onions into it, add celery, cut into cubes and a pod of red chili pepper in a couple of minutes (we take seeds and partitions from the chili, cut into thin rings).
Carrot gives sweetness and beautiful color. To better reveal its useful qualities, carrots, grated on a coarse grater, fry together with onions and celery for about 6 minutes.
The remaining vegetables are added to the pan all together, frying and stewing them separately is not necessary.
First we put fresh cabbage chopped with very thin strips.
Next, add peeled and peeled seeds, cut into small cubes, zucchini. Small young squash can not be cleaned, the seeds are undeveloped in them, and the peel is tender.
We clean the sweet yellow pumpkin from the peel and seeds, cut into cubes, put in a pan.
Of the vegetables, only the potato remains - we also peel it, cut it into cubes, put it on the rest of the ingredients.
Modern technology has greatly simplified the preparation of vegetarian and lean dishes. If you do not have time to cook the vegetable broth, then the bouillon cubes are indispensable in this case.
Pour 2 liters of water into the pan, add cubes, put on a strong fire.
When the soup boils, turn off the gas, close the pan with a lid. Cook over low heat for about 40 minutes. During this time, the vegetables will become soft, give their aromas to the broth.
Pour lean cabbage cabbage with pumpkin into a plate, sprinkle with green onions and chili rings, if necessary, then add a little bit of salt directly in the plate. Serve with a piece of fresh bread - Bon appetit!
