It is very tasty to spread the pate on cheese cookies with green onions, put a slice of sausage or ham - just an overeating! The dough is simple, without eggs, it looks like shortbread, but the proportions are slightly different. The egg in the dough replaces milk, which binds together the dry ingredients and the filling. Cornmeal in this recipe can be replaced with semolina.

Pour into the bowl the dry ingredients of the cheese biscuits - wheat and corn flour, add the baking powder of the dough, mix everything thoroughly.
Rinse a small bunch of green onions and a small bunch of fresh dill with cold water, cut finely, add to the dry ingredients. It is not necessary to dry the greens, you can add wet.
In a tablespoon of warm water, dissolve a little less than a teaspoon of salt. Mix flour with herbs, add salt water.
We rub hard cheese on a grater. For this recipe for cheese biscuits, I advise you to choose piquant cheese, for example, parmesan, blue cheese will also be appropriate.
Cut the cold butter into cubes, add to the dough after the cheese.
Rub the oil with the dry ingredients with your hands to make a crumb, add cold milk. The dough can be mixed in a food processor, loading the ingredients in turn. Choose a pulse mode, literally a few inclusions, so as not to turn the greens into mashed potatoes.
Knead the dough for several minutes, collect in a lump, put in the refrigerator for 20 minutes. Meanwhile, we heat the oven to 200 degrees Celsius.
Grease baking paper and a baking sheet with a drop of olive oil. Divide the dough into 10 equal parts, roll the balls with wet hands, put it on parchment, slightly press down with your hand. I made cookies weighing about 50 g, you can bake smaller ones - more than 30-40 g of cookies will come out in pieces.
We put the pan on the average level of the heated oven, bake for 20-25 minutes. Baking time depends on the size of the cookies and the individual characteristics of your oven. The time may vary slightly, so do not leave the pastries unattended, as soon as the cookies are “gilded” from above, you can get it out of the oven.
