- 6 medium potatoes, boiled in their skins;
- 2 onions;

A method of preparing a lean potato salad with celery and apple
Boiled in a jacket and completely cooled potatoes, cut into large cubes. Salad can also be cooked with warm potatoes, it will also turn out delicious, but such a salad needs to be eaten right away, because the rest of the vegetables will soften in a "warm atmosphere".
In a separate bowl we add chopped onion, very thin rings, leek and sour green apple, cut into thin strips. Season the vegetables with a pinch of sea salt and pour over freshly squeezed lemon juice. Then mix thoroughly so that the juice covers the apples, and they do not darken.
We cut the celery stalks into small cubes, you can replace the stem celery in the recipe with the root, but then the root needs to be boiled with potatoes and cut into cubes.
We mix all the chopped vegetables in a deep salad bowl, add freshly ground black pepper and extra virgin olive oil. To enhance the beneficial effect of the salad, I advise you to add 1-2 teaspoons of flaxseed oil to it.
In a dry frying pan, fry peeled sunflower seeds until golden brown, add to the rest of the ingredients, season them with a pinch of sea salt during frying, and the fried seeds will be tastier. Cut into thin strips a small part of the green leaf of leek, sprinkle the salad.
We spread the potato salad on the green leaves of the fresh salad, and if only someone tries to say that lean and vegetarian food is tasteless or fresh, this simple salad refutes all attacks and makes them in vain.
