Zucchini fritters with oatmeal - eat and lose weight!
Zucchini pancakes with oatmeal in a pan are cooked quickly, simply and without flour. Therefore, they are suitable for those who, for various reasons, cannot tolerate or do not use products containing gluten, as well as those who dream of a thin waist. This dish is for every day, I invented and prepared an incredible variety of different options for its preparation, and besides me, probably, millions of cooks did the same. In this recipe for pancakes with zucchini, there are no dairy products and flour, only vegetables, oatmeal and eggs.
An important point in the preparation of squash fritters is the juice that is extracted from vegetables. Zucchini is 80% water, so there is a lot of juice, and I felt sorry for squeezing this natural moisture, as is usually advised. I tried to grate zucchini on a Berner grater with a small nozzle, quickly knead the dough and fry the pancakes. Moisture did not have time to stand out, it turned out very juicy!
When you fry, do not spare the oil, let the pancakes in it almost float, as in deep fat. In order not to eat excess oil and not to increase the calorie content of a serving, immediately from the pan you need to put the pancakes on paper towels that absorb excess fat.

Ingredients for squash fritters with oatmeal
- 300 g zucchini squash;
- 2 large chicken eggs;
- 70 g of green onions;
- 4 tbsp Hercules
- 1.5 tbsp corn starch;
- 2 tbsp dried carrots;
- salt, pepper, vegetable oil.
The method of preparation of squash fritters with oatmeal
We rub the young zucchini (zucchini) on a grater with the smallest nozzle - you get such a thin straw or noodles. Grated vegetables put in a bowl, do not salt!
Add a finely chopped bunch of green onions to zucchini.
Then we break raw eggs into a bowl, and gently mix the fritters ingredients with a spoon. The structure of the eggs will gradually collapse, a dense mass with pieces of vegetables will turn out.
Pour the oatmeal and mix everything again. Oatmeal will immediately begin to absorb moisture, will gradually swell.
Next, pour corn or potato starch and dried carrots. Like flakes, these products absorb moisture from the dough. Therefore, squash pancakes with oatmeal for losing weight come out very juicy.
Then pour salt to your liking. I don’t recommend strongly salt the dough, it’s better to slightly add salt to the pancakes or sour cream.
Strongly heat a non-stick pan. Pour a few tablespoons of cooking oil into the pan. With a tablespoon, immediately spread the fritters in the heated oil.
Fry over high heat until golden brown. This will take about 2-3 minutes, then turn over and cook on the other side for another 1 minute.
On the table we serve diet squash pancakes with oatmeal with dill sauce or just sour cream. Enjoy your meal!
The other day I improved the recipe for fritters - I added a teaspoon of thick soy sauce and half a teaspoon of ground sweet wig to the dough, it turned out very tasty!
By the way, if you do not like the process of frying in a pan, then you can cook in the oven. Before placing the dough on a baking sheet, pour vegetable oil into the baking sheet and place in the oven for several minutes. Then put the pancakes with a spoon in the heated oil and put the pan in the oven for a few minutes.
