Tomato sauce with onions and sweet peppers - thick, fragrant, with slices of vegetables. Make such preparations in late summer or autumn, when the vegetables have ripened under the sun in the beds. From bright, red tomatoes you get the same bright home-made ketchup. This sauce is a ready-made dressing for spaghetti, and you can just spread it on bread - very tasty. For better preservation, you can add a little vinegar (10-15 ml) in a liter jar, but this is not necessary - tomato and non-vinegar workpieces are usually well preserved until spring.

- 2 kg of tomatoes;
- 150 g of onion;
- 250 g of sweet pepper;
- 5 cloves of garlic;
- 4 tablespoons of granulated sugar;
- 3 teaspoons of salt;
- 2 teaspoons apple pectin.

Juicy and meaty tomatoes with a high content of solids and sugars are suitable for sauces and ketchups. By the way, amazing ketchup is obtained from the Black Prince variety. We sort out the tomatoes, discard those with signs of spoilage, but you can leave slightly overripe and slightly crumpled, they are ideal for such preparations.
To speed up the process of steaming tomato sauce, cut the fruit in half, put in a pan with a thick bottom, pour some water on the bottom to make the process go faster.
Close the pan with a lid, bring to a boil, cook for about 20 minutes. Time depends on the size and variety of fruits, in general, as soon as they fall apart and almost turn into mashed potatoes, you can remove the pan from the stove.
Steamed tomatoes are transferred to a sieve with small cells, wipe with a tablespoon. The cake will remain on the grid - tomato seeds, the remains of the stalk and pieces of the skin.
Onions for tomato sauce cut into very small cubes, at this stage I advise you to use a vegetable cutter. Pour chopped onions into a pan with a thick bottom.
Pods of red sweet pepper are cut in half, remove the stalk with seeds, washed with cold water. Cut the flesh finely, about the same as onions. Add chopped pepper to the pan.
Grind the garlic cloves. For this recipe, garlic needs to be cut, the garlic press should not be used. Put chopped garlic in a pan.
We leave one tablespoon of sugar, pour the remaining granulated sugar and salt into a pan with chopped vegetables, then add the mashed tomato puree.
We heat the sauce over medium heat to a boil, cook for 30 minutes after boiling without a lid so that the water evaporates.
Mix apple pectin with the remaining tablespoon of granulated sugar. If pectin is added separately, then it will stick together in a lump.
Pour sugar and pectin into small pots in small portions, mix, simmer for 3 minutes, remove from heat.
Banks for the preparation of my sauce, sterilize. Pour boiling tomato sauce into clean and dry cans.
We close the tomato sauce with onions and sweet pepper tightly, for long-term storage pasteurize at 85 degrees 20 minutes (jars with a capacity of up to 1 liter).
