Shortbread Apple Pie with Meringue
The most delicious shortbread apple pie is a biscuit with apples and meringue, which consists of unsweetened shortcrust pastry, baked apples and tender meringues with a golden brown crust. You will need time to prepare it, but basically it is, so to speak, passive time, which does not require your direct long-term participation.

Ingredients for Shortbread Apple Pie with Meringue
- 600 g of apples;
- 15 g of vegetable oil;
- 5 g ground cinnamon;
- 1 3 nutmeg.
For the test:
- 150 g of wheat flour;
- 2 3 teaspoons of baking powder;
- 75 g butter;
- 3 raw egg yolks;
- a pinch of fine salt.
- 3 raw egg whites;
- 120 g of powdered sugar.
The method of preparation of shortbread apple pie with meringue
For the filling, bake apples - my, remove the core, cut into slices about a centimeter thick.
We cover the baking sheet with a piece of parchment for baking, put the sliced apples, pour over the refined vegetable oil (odorless). Bake on the middle shelf of the oven for 25 minutes at a temperature of 165 degrees Celsius.
While apples are baking, we make dough for a biscuit. Cut the butter into small cubes.
Pour the highest grade wheat flour mixed with baking powder and small salt to the butter. Grind the ingredients until crumbs are formed.
Break the raw eggs into a deep bowl, separate the yolks from the proteins. Then mix the yolks with flour and butter crumbs, quickly knead the dough.
We separate about 50 g of dough, put it in the freezer. We roll out the remaining piece with a layer 4-5 mm thick, put on a clean, dry baking sheet.
To transfer shortcrust pastry onto a baking sheet, it needs to be rolled out between two sheets of parchment.
We form a round biscuit on a baking sheet, with a tablespoon we gently crush it in a circle to make a low side.
On the dough we put a fan of cooled baked apples. You can put several layers.
Sprinkle apples with ground cinnamon and grated nutmeg. We put the pan in a cool place while we are preparing the meringue.
Beat raw proteins in a food processor for 2-3 minutes until a fluffy white mass is obtained. Then slowly pour the powdered sugar. The powder should be sprinkled in small portions, otherwise the whole kitchen will be covered with white dust.
Beat the protein and powder until stable peaks, put on apples.
We distribute the meringue across the apples in an even layer, the mass is dense, so there is no need to be afraid that it will creep.
We take out the frozen dough from the freezer, rub it on a coarse grater, sprinkle the meringue evenly.
We send the pan to the oven heated to 160 degrees for 40-45 minutes. Watch out for pastries, but don’t open the door! Meringue thing is very capricious: just that, will settle, and the cake will turn out completely flat. If necessary, after 20 minutes, the baking temperature can be reduced to 130 degrees.
Turn off the oven, open the door, leave the cake in the oven until it cools completely.
We cut the sand apple pie with meringue into portions, sprinkle with ground cinnamon, serve to the table with a cup of hot tea. Enjoy your meal!
