The way to cook duck with apples
Great if you can find a homemade duck. It is oily, soft, and baked faster. A store duck is also suitable, but since the meat is harder, it is advisable to boil it before baking. And if you want to do without boiling, then you need to bake longer.
So, plucked, gutted and thawed my duck, dry it slightly, prick the skin with a fork or cut it with a knife, rub it with salt, pepper and seasonings. Let stand at room temperature for 1 hour - marinate.
We begin to peel the apples shortly before the specified time passes - if they are peeled earlier, they may darken. We take hard varieties so that during prolonged baking, apples do not turn into mashed potatoes, but remain slices.
Cut the washed apples, peel the cores, and do not peel the peel.
We push as many apples into the duck as possible.

It’s better to bake a duck in a sleeve than just on a baking sheet or in a lamb — tightly tied, it will cook much faster and turn out juicy.
We need a piece of sleeve to bake three times the length of the duck itself. Carefully, so as not to tear the sleeve, we place the duck in its middle.
We retreat from it by 15-20 cm to each edge and tightly tie the sleeve - in knots or using special clamps. The allowance is necessary so that the sleeve, inflating during preparation, does not crack.
Put the duck in the sleeve on a baking sheet or in a baking dish and put in the oven.
Cook at 200-220 ° C for an hour, perhaps 15-20 minutes longer - the exact time depends on the size of the duck and your oven. The sleeve should be inflated, the broth in the sleeve should boil, and the duck should be a little gilded. Then we reduce the baking temperature to 180 ° C and we will cook another 30-40 minutes so that the duck is well baked.
After 1.5-2 hours, even the store duck should cook. But inside the sleeve, it remains pale. And we need ruddy, beautiful! Therefore, we get out the shape with tacks and carefully - in the middle is hot steam! - cut and open the sleeve. We spread whole apples around and put the duck under the grill for 15-20 minutes.
Duck with apples is ready. Spread it on a tray.
