Ingredients for cottage cheese cookies "Easter eggs" with apricot jam
- 200 g of cottage cheese;
- 350 g of flour;
- 2 tbsp. l poppy;
- 1 part baking powder;
- 1 egg
- 100 g of sugar;
- 70 g of butter;
- 50 ml of milk (if necessary);
- 3-4 tbsp. apricot jam;
- icing sugar - for sprinkling.
The method of preparation of curd cookies "Easter eggs" with apricot jam
Before preparing Easter cookies in the form of eggs, steam the poppy in boiling water, let it stand and swell for 10 minutes, then squeeze the water well or drop the poppy on a fine sieve - no excess moisture is needed in the dough.
In the bowl of the combine (or in a bowl, if you knead the dough by hand), add the cottage cheese, squeezed poppy seeds, egg, sugar, melted butter. Set the milk aside for now - it will be necessary to add it only if for some reason the dough does not want to stick into a lump. For example, you come across dry cottage cheese, or your flour needs more moisture to form a lump.
We turn on the combine with the “knife” nozzle to mix all the ingredients to a homogeneous mixture.
Pour the sifted flour and baking powder, once again start the combine. If the dough has become plastic, you can not add milk, and if you have crumbly butter and flour crumbs, pour in some milk and turn on the combine again.
The dough should be similar to shortbread, it does not need to knead for a long time, otherwise the cookies will turn out to be tough. Blind the dough into a lump and let it cool for 30 minutes in the refrigerator.
Next, we divide the dough into two equal parts, one by one we roll it out onto a thin layer on the work surface sprinkled with flour. The dough in the oven rises well, so roll it thinly, no more than 3-4 mm.
We cut out the future Easter cookies in the form of eggs in a curved notch or on a paper sample. In the second part of the test, cut out the hollows under the “yolk” on the resulting figures. We cut the scraps again, roll out and cut out the figures.
Place the billets on a baking sheet, bake at 180 degrees for 10-12 minutes, or until the cookies are browned on top. Let’s cool.
Assembling cookies: grease two halves of cookies with apricot jam, fasten them together, and additionally put jam in the recess.
Sprinkle cottage cheese cookies with powdered sugar without affecting the “yolk”.
Easter cookies are ready. Enjoy your meal!
As you can see, no difficulties with the preparation of this curd cookie can arise. And the joy that it will give to your children will be remembered for a long time.
Happy holiday to you!
