Solyanka team with chicken and arborio rice - a hearty and nutritious dish. I cook it in cases where there is a lot of little things left in the refrigerator: a piece of zucchini, half a fork of cabbage, in general, any seasonal vegetables are suitable, it’s not without reason that the dish is called a hodgepodge. Arborio rice acts as a sponge - it absorbs all the juices that are released when stewing vegetables, so the hodgepodge will be very thick. I usually lay chicken without bones to reduce cooking time.
If in addition to chicken in your refrigerator there is a small piece of ham or smoked sausage, feel free to add them to the pan, it will only taste better!
There are several types of hodgepodge - thick soup on a strong broth and stew with cabbage, each of them mistresses interpret in their own way. And as a result of recipes, it turns out as much as the Italian minestrone or the French ratatouille, choose the one that you like and can afford.

Ingredients for the hodgepodge team with chicken and arborio rice
- 0.5 kg of chicken thighs;
- 300 g of cabbage;
- 200 g of stem celery;
- 100 g zucchini;
- 80 g of onions;
- 130 g carrots;
- 120 g of green beans;
- 150 g of potatoes;
- 60 g of rice aoborio;
- 60 g of pickles;
- 2 cloves of garlic;
- 2 chili pods;
- 5 g ground paprika;
- olive oil, salt, bay leaf.
The method of cooking hodgepodge with chicken and arborio rice
Cut chicken thighs - cut the meat from the bones, remove the skin, cut into small pieces. Heat 2 tablespoons of olive oil in a frying pan or roasting pan, fry the meat in small portions on each side, put it on a plate.
Peel the garlic and chili, fry for several seconds in the same pan in which the meat was fried to flavor the oil. I advise you to clean chili peppers from seeds and a thin membrane so that the dish does not turn out very spicy.
Add finely chopped onions, carrots and celery, diced, fry vegetables for 10 minutes, they should become soft and transparent.
We return the fried pieces of chicken to the pan, cook everything together for several minutes, after which we begin to collect the dish.
First add diced peeled raw potatoes and thinly shredded cabbage. Ordinary cabbage can be replaced with Chinese or Savoy, it will turn out even tastier.
Then we put green beans and zucchini. Green beans can be added both fresh and frozen. For fresh green beans, we cut off the ends on both sides.
Peel pickles, finely chop. Add rice, cucumbers, ground paprika and 2 bay leaves to the rest of the ingredients, all salt to taste.
Pour about 100 ml of water or broth into the pan, cover with a lid, cook on low heat for 25 minutes. If in the process all the liquid boils, then add a little hot water.
Sprinkle the finished dish with fresh herbs, for example, basil, and immediately serve.
To taste, the hodgepodge team with chicken and arborio rice can be seasoned with fat sour cream or hot tomato ketchup, bon appetit!
