Homemade muffins with dried fruits - a simple recipe with figs, cranberries and prunes, which will obey even the inexperienced confectioner in the beginning confectioner. A delicious kefir cupcake with cognac and dried fruits will decorate any home holiday, besides such pastries can be prepared in less than an hour. However, there is one important point - dried fruits must be soaked in cognac for at least 6 hours. I advise you to do this on the eve of cooking - they will soak well during the night. Instead of brandy, you can use rum, whiskey or strong liquor.

Ingredients for homemade dried fruit muffins
- 100 g dried figs;
- 50 g dried cranberries;
- 100 g of prunes;
- 150 ml of brandy;
- 150 g butter;
- 200 g of granulated sugar;
- 150 ml of fatty kefir;
- 2 chicken eggs;
- 120 g of wheat flour;
- 70 g semolina;
- 1 teaspoon of baking powder;
- 1/3 teaspoon of baking soda;
- 1 teaspoon ground cinnamon;
- 30 g of ground orange peels or zest of 2 oranges;
- a pinch of fine salt, icing sugar.
A method of preparing homemade muffins with dried fruits
Put dried fruits in a bowl, pour boiling water. After a few minutes, drain the water, thoroughly rinse the dried fruits with running water.
Then chop the figs and prunes into thin strips, leave the dried cranberries whole. We place dried fruits in a hermetically sealed jar, pour in cognac, leave at room temperature for 6-8 hours, and preferably - at night. During the night, dried fruits absorb almost all alcohol.
We make dough for muffins with dried fruits. The softened butter is mixed with sugar and a pinch of fine salt.
Beat eggs with a sugar mixer.
Beat the ingredients well so that the mass becomes light and lush, and granules of granulated sugar dissolve.
Then add fat, slightly warm kefir. You can put a bottle of kefir in hot water for a couple of minutes, so it heats up faster.
Next, add the dry ingredients to the liquid ones - pour sifted wheat flour, semolina and ground orange peels. Also pour baking powder and baking soda.
Knead the dough thoroughly so that there are no lumps left.
When the muffin dough is ready, add dried fruit and ground cinnamon soaked in cognac.
Again, thoroughly mix the dough and heat the oven to a temperature of 180 degrees Celsius.
We take paper molds, insert them into silicone or metal. If you do not support the paper in a denser form, then the cupcakes will spread in breadth.
We send muffins with dried fruits to a preheated oven, bake for about 20-25 minutes. The forms are small, usually this time is enough for baking. We check readiness with a wooden stick - if it comes out of the baking dish dry, then it can be taken out of the oven.
Sprinkle the cooled home-made muffins with dried fruits with powdered sugar through a strainer and serve to the table with tea or milk. Enjoy your meal!
